Steamed Mint Sponge Cake ( Ma Lai Go )---蒸薄荷马拉糕

The mint plants at our backyard garden.

    Ingredients:
    2 large eggs
    100g flour
    85g sugar
    130g soy milk/ 2%milk
    3og corn flour
    6g baking powder
    4g bicarbonate soda
    20ml melted butter/ vegetable oil
    2 tablespoons of fresh mint juice/ 2-3 drops of peppermint oil
    Green food coloring (optional) 
    Fresh mint leaves for garnishing

    Method:
   1) mix & sift all dry ingredients.
   2) beat eggs until foamy, gradually add in sugar and beat the eggs until pale & thick.
   3) add the milk slowly & mix well then mix in the dry ingredients into the egg mixture & gently fold until  
      combined.
   4) add the oil/ melted butter into the batter, mix well.
   5) grease a 8" round stainless steal pan, pour the better, set aside for 30 min.
   6) boil water in a steamer pan or a wok, steam the better by using high heat for 25-30 min.
